    Brie, Grits, Ham, and Apple Casserole

    For the third week of our pre-tour of Bruce's and my new book, HAM: AN OBSESSION WITH THE HINDQUARTER, published in only two weeks, we're gonna do a real comfort-food classic, made with crazy-good, down-home, wet-cured ham (aka, deli ham--the stuff you get on sandwiches). You're in for a real scoop on the book with this post, because this luscious bit of comfort food is a great meal with a vinegary salad on the side--or as I had it this morning, a plate of "leftover" casserole, nuked in the microwave until hot. Which fortified me to go out and get rid of the seven (frickin') inches of snow we got yesterday.

    All-Vegetable, No-Noodle Lasagna

    We're closing in on writing our 19th cookbook (that's counting the two for the fussy celebrities) and there are a two things I've learned over the years: 1) some people like exact recipes and 2) some people don't.

    I'm a recipe-follower. Probably the debt of a stern Protestant upbringing. I follow the rules, make it as it stands. If I make it again, I might alter the recipe. Maybe (after a glass of wine). Mostly, I do it by the books. Give it to me in grams and I'm happier.

    Bruce never met a recipe he couldn't disregard. He rarely follows one. Even his own. Right now, we're cider-curing a bone-in, big-butt ham for a cookout this weekend, using the recipe from our up-coming book on ham (AN OBSESSION WITH THE HINDQUARTER), and yesterday I had to walk him carefully through the procedure to make sure he observed his jots and tittles.

    Even when we're done recipe-testing for a book, Bruce will read through the manuscript and say, "Oh, you know, we could make that with thus-and-so."

    "Did you?" I'll ask, a little exasperated.

    "No, but you could."

    So this post is for him--to celebrate one of his on-the-go, never-the-same-way-twice summer veggie casseroles. It's like a lasagna, tomatoey and cheesy, but without any noodles. And the recipe's going to be inexact. Very.

    Tuna (And Artichoke) Noodle Casserole

    When we were on Martha Stewart radio a few weeks ago, Betsy Karetnick, the host, was on a tear about tuna noodle casserole. She was asking people to call in to try to sell her on the whole idea.

    Now I ask you, Betsy: what's tuna noodle casserole done to you? Too many Lutheran church socials? A couple Methodist funerals thrown in the mix?

    It all got me thinking about how much I wanted some for dinner. And soon. After all, one host's horror is another man's comfort. 

    No, Bruce and I don't use cream of mushroom soup (aka, Midwestern food fix-it, guaranteed to smooth over any mistakes). And no, we don't crumble potato chips over the thing before baking. But we do cut the fat quite a bit. And we put artichokes in it. A green vegetable. It's sort of healthy. It's definitely real food.
